The western highlands of Honduras are one of the finest coffee growing regions in the world. The area surrounding Copan is home to several coffee fincas (farms) which produce high quality shade grown coffee. Grown in the shade of the highest mountains, the green coffee beans benefit from the lower temperature and sunlight levels which help the crop reach the highest quality at maturity. 

Growing coffee under natural shade is also environmentally friendly as this ensures that these forests will be protected and will continue to provide a home to the many migratory birds in the area.
