Peruvian gastronomy is the most varied and rich in the world, experts consider it one of the three richest and original in the planet. Peru offers what is arguably Latin America's most original cuisine and one of the best, if also one of the least well-known, until now.

Discover the authentic flavours, resulting of the unique mix of Western and Eastern cultural traditions. Over the course of centuries, Peru has felt the influence of Spain in stews and soups, Arab sweets and desserts, African contributions to Creole cooking, Italian pastas, Japanese preparations of fish and shellfish and Chinese culinary methods all of which have given birth to contemporary Peruvian Cuisine

Recently, The Washington Post, one of the most prestigious US newspapers, published an extensive article about the rising popularity of the Peruvian food in the world. Written by the famous food columnist Walter Nicholls, he recounted how Peruvian food has evolved throughout the centuries, from the ancient Inca Empire and its melange with the Spanish "conquistadores" through successive immigration waves of Chinese, Japanese, European and black people.

On top of that, Peru boasts 84 ecosystems out of a 104 that exist in the world making our ingredients and dishes as varied as the imagination can be. According to Nicholls:

Take one part Incan and one part Spanish. Mix well. Add influences of African, Chinese, Japanese and Italian. What do you get? Peruvian -- the cuisine that legendary French chef and culinary writer Auguste Escoffier called one of the best in the world -- after only French and Chinese. Considering its status, it’s also a cuisine that has been relatively overlooked… until now.”

From a traditional market to a world class restaurant table, take an opportunity to participate in and learn about the complete process that Peruvian chefs carry out every day to develop the leading new flavours that the Peruvian gastronomy fusion is delivering to the world.

A full adventure throughout the magic corners where the most outstanding Peruvian food is prepared and served. Guests will not only be able to witness the preparation, but also taste the exquisite flavours of our country’s most representative dishes.
